Yum yum yum! I just made this homemade Spanakopita recipe and I had it for leftovers for like a whole week. I just finished it and I’m already wanting more just talking about it! You guys probably think all I eat is feta cheese and spinach 😂 I don’t, but I’ve definitely been on a kick lately! For those of you that aren’t familiar, Spanakopita is a Greek dish with dough (or filo dough) filled with spinach, feta cheese, green onions, and lots of other yummy stuff! This is all vegetarian to all my veggie lovers out there. My Yiayia and my mom have tweaked this recipe a lot over the years to find the recipe we all loved the best. You’ll be working on the crust and the filling separately and then we’ll put it all together, here we go!

CRUST

  • 2 1/2 cups All Purpose Flour
  • 3/4 cup olive oil
  • 1 TBSP. salt
  • 1 egg (slightly beaten)
  • 3/4 cup white wine

Mix above ingredients well. Let sit for 15 min. Preheat oven to 350.

FILLING

  • 30 oz. chopped spinach (frozen or fresh)
  • 1 tbsp. salt
  • 20 oz. crumbled feta cheese
  • 2 eggs (slightly beaten)
  • 6 green onions chopped
  • 1 leek (wash well, chop into small pieces)
  • 1 cup fresh dill
  • 1 cup olive oil

-Place frozen spinach in a bowl, add salt. Mix spinach and let sit for 15 min.

-Squeeze spinach to get all the water out. Place in dry bowl.

-Add all the remaining filling ingredients. Mix well.

PUT IT ALL TOGETHER

-Separate the dough into 2 balls.

-Sprinkle flour onto clean surface. Knead 1 dough ball with rolling pin to fit pan size ( I used 12 x 9 1/2 in. pan)

-After flattened, place dough at the bottom of the pan.

-Add filling and flatten evenly.

-Knead second dough ball flat to fit pan and place on top of filling.

-Cut top layer of dough into squares. Brush the top generously with olive oil.

-Bake at 350 degrees for 1 hour.

This is perfect for an appetizer or even a main course. I always make this for parties or when I’m having a lot of people over. You can always find this at my house on any holiday guaranteed. But I also make this just for myself or for a few people too because leftovers are delicious… I actually like it better the next day cold but that’s just me 😜 Have a wonderful Tuesday and enjoy my family’s homemade spanakopita recipe!
