Happy Labor Day everyone! This weekend there was lots of munching, plenty of BBQ food, and too much pigging out for me so I really need to get some vegetables in me! My Spinach Feta Omelette is exactly what I need to start off my week after LDW. It’s easy to make, delicious, and so healthy! Here’s what you do:
-Crack 2-3 eggs in a bowl and mix well (can substitute with egg whites). Add a splash of milk in the bowl and mix to make extra fluffy.
-Heat pan on stove. Add butter. Melt to coat pan.
-Wash 2 cups of spinach and run it through the salad spinner to remove excess water. Place spinach in hot pan with melted butter. Cook until soft and wilted. Pour egg mixture over spinach. After few minutes you can flip it.
-Once eggs are all the way cooked through, add as much feta cheese as you like. Tomatoes to garnish.
*Onions, zucchini, tomatoes, kale, etc. are all yummy additions!
